Sprouted Bean Trio – Yes, this is worth reading. November 3, 2011

The other day I was strolling through Costco (not when waiting for Alton), enjoying being alone (Jackson was with his Grammy), when something caught my eye. I don’t really recommend this strategy for shopping in Costco because you seem to end up with a year’s supply of something you didn’t know you needed and a couple hundred dollar bill. But on this day, I found a new healthy product at a great price – this little treasure:

Interesting, I said to myself. But I was sure it would be a cook-all-day kind of bean and not worth the time. When I looked closer, the nutrition facts were mesmerizing,  it only took 15 minutes to cook, and it cost less than 10 bucks. Sold!

I honestly don’t know a whole lot about the sprouted bean thing. But I just read the back of the bag and it says that by sprouting the beans, certain nutrients become more available to our bodies and the protein is more useable. I’ll have to do a little research on this to see what the deal is, but nonetheless, it is a really healthy food.

This has been sitting in my kitchen pantry for a couple of weeks now, buried under some dried cranberries that I also bought that day (a year’s supply of course). Today I am going to a girlfriend’s house for lunch so I decided to dig it up and make a salad. Due to lack of time (Jackson is on the verge of waking up any minute) I just followed the recipe on the back of the bag for their bean trio salad. It includes parsley, green onions, cucumbers, EVOO, lemon juice, and cumin.

At first taste, the beans themselves are very bland. They need flavor. I will even venture to say this mix is not for the bean faint of heart. You need to love your legumes. But I think after sitting in the flavor additions for a couple of hours, we will have something tasty on our hands.

If you find yourself looking around Costco anytime soon, check out this bean mix in the dried goods section. It’s a quick, healthy option to fill you up during this holiday season. I’ll post the nutrition facts below. Enjoy!

Serving: 1/3 cup dry

160 calories, 0.5 g total fat, 0 mg cholesterol, 10 mg sodium, 27 g carbs, 11 g fiber!!, 11 g protein!!!

    this is interesting – first off I LOVE BEANS, all kinds – I crave them so I am excited to hear about these. But, I am also curious because seems like Costco “launches” a lot of healthy food trends- Costco is where I found Stacy’s Naked Chips for the first time and is also where I first found Bare Naked Granola products. Hmmmm…wonder if they have a penchant for launching nutritional products?

    A filet of steamed herbed fish over that bean salad sounds like heaven! I buy fish filets at costco, take them home and take a moment to top each filet with a thin slice of lemon or lime or orange, a sprig of fresh thyme or parsley, and wrap each filet in saran wrap, place on a cookie sheet and freeze. once frozen, I toss them all in a zip top bag and keep frozen. simply remove one from freezer, unwrap and set in a steamer or bamboo steamer baskets and let cook, 20-30 minutes until done. easy and delicious!

      I love your fish idea and have made it many times. It doesn’t get much easier than this! And it’s super tasty. You turned me on to steamer baskets and I have never been the same. =)

    I made this and just put some olive oil, salt and pepper on it and it was delicious. My husband really liked it and he isn’t necessarily one for ‘healthy’ foods like this.
