I came across this statement as I prepare for a presentation today. I love it. It’s a great little mantra to tuck away in your mind and pull out when faced with the dilemma of over eating. Indigestion truly happens for a lot of reasons, but perhaps we do put it on ourselves more often than we should.

Tropical Quinoa Salad June 9, 2011

Tomorrow we are having a tropical potluck at work. (I love a good potluck.) I’ve had a great mango quinoa salad before but couldn’t find a recipe that seemed similar. So I decided to create my own. I like how it turned out but I think it will be even better after sitting in the fridge overnight. I think using really ripe, sweet mango is key and sometimes it’s a challenge to find a good mango. Here’s the recipe. Try it out for your next summer gathering.

Tropical Quinoa Salad

4 cups cooked quinoa, cooled

3 mangos, diced

1/2 red onion, diced

1/4 cup fresh cilantro, minced

Extra Virgin Olive Oil – just enough to moisten the salad

1 tsp kosher salt

1/4 cup dried cherries, chopped

zest of one lime

juice of 2 limes

1. Cook quinoa in mixture of 1/2 vegetable stock and 1/2 water. Let cool.

2. Mix all ingredients in a bowl. Taste to adjust flavors of preference.

3. Chill 2-4 hours or overnight. Makes about 5 cups.

Herbed Turkey Burgers June 1, 2011

Last night I taught a “Summer Burger Madness” cooking class at Whole Foods with a colleague. Unfortunately, they were out of ground turkey and we were not able to make this turkey burger recipe that I have been working on. It’s inspired by the burger I had last summer in Napa (see June 2010 posts).

Turkey burgers are tricky because they can get very dry. I don’t think ground turkey breast has a lot of flavor either so the right ingredients are needed to jazz them up.

I’m pretty happy with the recipe I came up with. The mushrooms and onions add the right amount of moisture while the parsley gives a nice background flavor. I recommend making them slider size as they are delicate. Serve with a sharp cheddar on a toasted whole wheat bun and enjoy!

Herbed Turkey Burgers

 

1 lb ground turkey breast

1 small onion, grated

4 cloves of garlic, minced

½ cup finely chopped baby bella mushrooms

2 tbsp minced, fresh parsley

Salt and fresh cracked pepper to taste

  1. Heat mushrooms in the microwave for 1 minute. Drain liquid.
  2. In a mixing bowl, gently combine all ingredients using hands. Squeeze out excess liquid from grated onions before adding to the bowl.
  3. Form into patties and let rest on a platter for about 15 minutes.
  4. Grill on medium high heat for about 4-5 minutes per side. In the last minute of cooking, place a slice of sharp cheddar on burgers. Top with chutney and serve on toasted whole wheat bun.

Makes 4-5 burgers or 7-9 sliders
